Cocoa liquor, also known as cocoa mass, is the semi-solid product obtained from grinding fermented, roasted, and shelled cocoa beans. It is a homogeneous mixture of cocoa solids and cocoa butter, without the addition of sugars or other ingredients. It serves as the fundamental base for the production of chocolate and cocoa derivatives.
